It’s time to light the grill and bring the family together. Even novice grillers can enjoy some easy recipes that are real crowd-pleasers. Keeping it simple also gives everyone time to really connect around some great food. Start with these recipes and then expand when you feel confident.
Start with bacon-wrapped pineapple. Soak skewers in water. Thread fresh pineapple chunks wrapped in bacon onto the skewers. Cook on a hot grill until the bacon is crispy. These appetizers are a real crowd-pleaser.
Following the skewer theme, prepare salmon chunks with wedges of fresh lemon on the skewers. Sprinkle with fresh dill. Grill until the salmon is flaky and moist. You could also use large, fresh shrimp instead of salmon.
Vegetarians will love Portobello mushroom caps with spinach and cheese. Select meaty, fresh mushrooms and de-stem them. Fill them with a mixture of fresh spinach, cheddar, and cream cheese. Grill them until the mushroom is soft and the cheese is melted and gooey. These will satisfy the heartiest of appetites.
For those who love grilled meats, bourbon Teriyaki pork tenderloin is sure to be a hit. The marinade is made up of bourbon, Teriyaki sauce, minced garlic, brown sugar, and of course, the pork tenderloins (2 of them, each about 1 ½ pounds). Whisk together the first four ingredients. Pour them over the tenderloins and let it marinate overnight. Grill the tenderloins for 16-18 minutes. Slice and serve.
No meal is complete without dessert. Campfire cones are the perfect meal-enders. Fill waffle cones with marshmallows, chocolate chunks, bananas, and strawberries. You can substitute whatever you like – Reese cups, raspberries, white chocolate – you get the picture. Cover the whole cone with foil and grill for 5 minutes until all of the toppings melt.
